Yes! after years of high level espionage I have managed to get my hands on the recipe for the best damn cole slaw in the South.....the famous Cock of the Walk Catfish restaurants delectable, mouth watering concoction that can cause you to skip the BBQ and fill up a plate only with this................without further blathering - From Mike Sanders in Mobile Ala

Ingredients:
2 heads of cabbage, shopped in food processor for texture
1 large carrot, peeled and chopped
1/4 cup green onions chopped
1/4 cup white or vidalia onions, chopped
1/4 cup bell pepper, chopped
1/8 cup sugar
1 TBSp black pepper
1 TBSp garlic salt
1 TBSp Lowery's salt....I think I would experiment with Tony Cachere's here
1 TBSp white vinegar
12 oz Mayonnaise Hellmann's......no substitutes!...except maybe Blue
Plate........


Directions:
mix all ingredients and taste....if bitter add mo sugar..............refridgerate 24 hours....then pig out!

Title: Enchiladas

Description:
From Kirk and Susan in Germany

Ingredients:
1 1lb ground chicken, beef or turkey
2 pkgs taco seasoning mix
2 cans cream of chicken soup
8oz grated cheddar cheese
16oz plain, non-fat yoghurt
¼ c. diced onion
8oz diced green chiles
flour tortillas (small)


Directions:
Brown meat with onion and 4oz of chiles. Prepare meat according to taco seasoning directions. Place yoghurt, soup and the other 4oz of chiles together in saucepan and heat. Do not allow it to boil and stir frequently. Place a slight layer of this sauce in a 9 x 13 pan. Fill tortillas with meat and place with seam side down in pan. Pour rest of sauce on top. Sprinkle with cheese. Bake 20-30 minutes at 350 degrees F.

Title: Peanut Blossom Cookies

Description: From Jean Sanders' Christmas Cookies
These are the cookies with the Hersey's Kiss stuck in the center

Ingredients:
1/2 Cup Shortening (1/2 butter or Marg)
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 1/4 cups flour
1/2 Teas baking powder
3/4 teas baking soda
1/4 teas salt


Directions:
Mix shortening, peanut butter, sugars and egg thoroughly, sift flour, blend all dry ingredients. Together, stif into shortening mixture. Chill dough. Heat oven to 375 deg F. Roll dough in walnut size balls. place 3 inches apart on lightly greased cookie sheet. Bake 10-12 Minutes, have kisses unwrapped and ready. Push Kiss slightly onto top of cookies. Don't touch after that and cool.

Title: Quick -N- Easy Pasta Sauce

Description:

Ingredients:
Ingredients:
1 tsp olive oi
2 TBL tomato paste
1 c. chopped onion
½ tsp dried Italian seasoning
4 garlic cloves, minced
¼ tsp black pepper
½ c. dry red wine or 2 TBL balsamic vinegar
29 oz diced tomatoes
1 TBL sugar
2 TBL chopped fresh parsley
1 TBL chopped fresh basil or 2 tsp dried


Directions:
Heat oil in a saucepan or large skillet over medium high heat. Add onion and garlic; saute 5 minutes. Stir in wine and next 6 ingredients (wine through tomatoes), and bring to a boil. Reduce heat to medium, and cook uncovered about 15 minutes. Stir in parsley. Yields 3 cups.

Title: Russian Tea Cake Cookies

Description:
This is Jean's recipe for those little spherical cookies we'd steal out of the glass jar around Christmas time when we were kids....

Ingredients:
1 Cup Butter or Margarine
1/2 Cup sifted conf. sugar
1 teas. vanilla
2 1/4 cups flour
1/4 teas salt
3.4 cup Grnd. Nuts


Directions:
Mix Butter, sugar and vanilla, add flour and salt together, blend in, mix in nuts, chill dough. Heat oven to 400 deg F. Roll dough into 1 inch balls (size of walnut). Place on ungreased cookie sheet. They don't spread. Bake 10-12 minutes (slightly brown). While still warm, roll in conf. sugar

Title: Smoked Salmon

Description:
Delicious, Basic, Easy, Smoked Salmon

Ingredients:
Salmon Filets, about 4-5 Inches Wide, with skin on is best
Non-Iodized Salt - one regular sized container
6 quarts of water
wood chips


Directions:
Cut the Salmon into 4-5" strips
soak in salt water solution for 2 hours
Salt water solution: one regular size salt container, 6 quarts of water
soak the wood chips also for 2 hours
rack dry the salmon for at least half an hour
smoke the salmon for 8-12 hours (the more the better) on medium, high if you want to get it done quicker - but you'd better check it more often and make sure the water container in the smoker doesn't dry up..
Also, move the salmon around on the racks once in awhile, otherwise they'll stick to it pretty hard.


Number Of Servings:As many as will fit into your smoker

Preparation Time:...let's see, buying a smokers, chips, salt, salmon....

Title: TGI Fridays Black Bean and Cheese dip

Description:
...this stuff is outrageously expensive compared to the quantities you get at the restaurant and in the frozen foods snack center at Winn Dixie so I got me some beers and decided to make it myself at the house one weekend.........the results were indistinguishable from their stuff: From Mike Sanders in Mobile Ala



Ingredients:
3 slices of thick West Virginia style bacon.
1/2 of a vidalia onion, chopped
1/2 of a red bell pepper chopped
8 oz of Monterey Jack Cheese, cubed
3/4 lb of Veleveeta cubed
1 can of Mexican Style Rotel (with cilantro)
1 can Black Beans
1 can Fat Free refried beans



Directions:
Fry up the bacon until crisp thne remove from grease. Chop up the bacon into bacon bits....pour off about 1/3 of the bacon grease and sauté the pepper and onion in the grease until onio is clear. Mix in the refried beans and heat until easily stirred.

in a big microwave bowl....combine everything, including the refried beans...................nuke in the microwave, stirring and checking until the cheese has all melted......pay attention the Monterey Jack , it does not ...I repeat ..does not like to melt.....


serve with white, blue or red corn tortilla chips and some ice cold cervesa's.............great for a football party

Title: Vegetarian Chili

Ingredients:
2 cloves garlic, minced
2 TBL olive oil
large green pepper, chopped
2 TBL chili powder
½ 1lb sliced mushrooms
1 tsp cumin
28oz crushed tomato
1 pkg defrosted corn niblets
15oz tomato sauce
2 c. diced zucchini
2 cans red kidney beans, rinsed
1 c. shredded cheese


Directions:
Saute garlic, onion green pepper and mushrooms in heated oil for 5 minutes. Add tomato, tomato sauce, chili powder, cumin, zucchini, corn and beans. Bring to boil. Reduce heat to simmer. Cover and simmer for 20-25 minutes. When finished, top with cheese. Stir until melted

Title: Zebra-Striped Cheesecake

Description:

Ingredients:
Crust: 1 c. graham cracker crumbs, 2 TBL butter, melted
Cake: 8 0z 1/3 less fat cream cheese, softened
1 c. sugar
2 large eggs
½ c. low-fat milk
2 large egg whites
2 tsp vanilla extract
4oz semi-sweet chocolate, melted



Directions:
Preheat oven to 325 F. To prepare crust, combine crumbs and butter in a bowl and toss with fork until moist. Press into bottom of 9in. springform pan coated with kitchen spray. To prepare filling, beat cheeses at high speed with mixer until smooth. Add sugar, milk, and vanilla, beating well. Add eggs and egg whites, one at a time, beating well after each addition.

Pour half of the cheese mixture into another bowl. Add chocolate to remaining batter. Pour 1/3 of white batter to prepared pan. Pour ½ of chocolate batter in center of white batter in pan, spread to within 1 inch of edge of white batter. Pour 1/3 of white batter in center of chocolate batter; spread to within 1 inch of edge of chocolate batter. Pour remaining chocolate batter in center of white batter; spread to within 1 inch of edge of white batter. Pour remaining white batter in center of chocolate batter; spread to within 1 inch of chocolate batter.
Bake at 325 F for 1 hour and 10 minutes or until almost set. Cheesecake is done when barely moves when pan is touched. Remove cheesecake from oven; run knife around outside edge. Cool to room temperature. Cover and chill at least 8 hrs.
